Ingredients
- 5 ears corn, cooked, and off cob
- 2 avocados, diced and sprinkled with lemon juice to prevent browning
- 2 cups tomatoes
- 1 small red onion
- 3/4 cup feta, crumbled
- 1 1/2 cup english cucumber, skin on, diced
- Cilantro Vinegarette
- 6 T olive oil
- 2 T sherry vinegar
- 1 tsp gralic
- 2 T cilantro
- 1/2 tsp salt
- pepper

Preparation
Step 1
Add all of ingredients to large bowl except vinegarette ingredients. Refrigerate.
Add vinegarette ingredients in a small glass jar with a lid. Shake well. Taste and adjust seasoning. When ready to eat, add dressing and gently toss.
