Avocado and Grilled Corn Salad with Cilantro Vinagerette 0 Picture

Ingredients

  • 5 ears corn, cooked, and off cob
  • 2 avocados, diced and sprinkled with lemon juice to prevent browning
  • 2 cups tomatoes
  • 1 small red onion
  • 3/4 cup feta, crumbled
  • 1 1/2 cup english cucumber, skin on, diced
  • Cilantro Vinegarette
  • 6 T olive oil
  • 2 T sherry vinegar
  • 1 tsp gralic
  • 2 T cilantro
  • 1/2 tsp salt
  • pepper

Preparation

Step 1

Add all of ingredients to large bowl except vinegarette ingredients. Refrigerate.
Add vinegarette ingredients in a small glass jar with a lid. Shake well. Taste and adjust seasoning. When ready to eat, add dressing and gently toss.
