Ingredients

  • 1-1/2 cups all purpose flour
  • 1-1/4 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. cinnamon
  • 1/8 t. salt
  • 2 slightly beaten egg whites
  • 1 cup mashed banana
  • 3/4 cup sugar
  • 1/4 cup cooking oil

Preparation

Step 1

In a medium bowl stir together flour, baking powder, baking soda, cinnamon, and salt.
In a large bowl stir together egg whites, banana, sugar and oil. Stir flour mixture into banana mixture just until moistened.
Spray an 8x4x2 inch loaf pan with non-stick spray. Spread batter into prepared pan. Bake in 350 degree oven for 45-50 min or til toothpick inserted near center comes out clean.
Cool bread in pan for 10 min. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap in plastic wrap overnight. Makes one loaf.
