  • 1 2/1 /2 to 3-pound young chicken, clean and drawn
  • 1 cup flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 cup vegetable oil

Step 1

Wash chicken and cut into pieces for frying. Mix flour, salt and pepper, and dredge chicken in mixture until well coated on all sides. Heat oil in iron frying pan and heat over moderate heat. Place chicken in the hot oil and fry until chicken is tender and golden brown, turning continuously. Drain on paper towels. Serve while hot.
