Ingredients
- 2 eggs
- 1/4 cup melted butter
- 1 3/4 cup milk
- 1 teaspoon vanilla
- 2 cups flour
- 3 tablespoons sugar
- 1 teaspoon salt
- 2 tablespoons RUMFORD baking powder (read why no Clabber Girl allowed!)

Preparation
Step 1
1. Heat electric griddle to 325˚ or skillet until water skitters.
2. In large batter bowl, beat 2 eggs.
3. Melt ¼ cup butter in a 2 cup glass measuring pitcher in the microwave for 30 seconds.
4. Pour in 1 ¾ cups milk to make 2 cups. Warm an additional 30 seconds. *This prevents the butter from balling up in your mixture.
5. Add milk/butter mixture to eggs. Mix well.
6. In separate bowl mix together all dry ingredients with a whisk or sift them together.
7. Add dry ingredients to wet, stirring only until combined. For tender pancakes, the less you stir, the better. For taller pancakes, let the batter sit for 10 minutes, for thinner pancakes, use right away.
8. Spray pre-heated griddle with cooking spray, very lightly.
9. Pour by ¼ cupfuls onto hot griddle.
