  • 3 1/2 pounds chicken pieces1 medium onion, coarsely chopped
  • 1 cup mushrooms, halved
  • 1 red bell pepper, coarsely chopped
  • 3/4 cup red wine, dry white wine or chicken broth
  • 1 cup chicken broth, divided
  • 2 cloves garlic, minced1 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flourHot cooked noodles

Step 1

1Cut bacon into 1/2-inch pieces. Cook bacon pieces in large skillet or Dutch oven over medium heat until crisp. Remove with slotted spoon; set aside.
.2Add chicken pieces to skillet; cook until golden brown, about 10 minutes, turning occasionally to brown more evenly.
.3Add chopped onion, mushroom halves, chopped bell pepper, wine, 3/4 cup chicken broth, minced garlic, thyme and black pepper to chicken in skillet. Bring mixture to a boil. Reduce heat and simmer, covered, for about 25 minutes.
.4Combine remaining 1/4 cup broth and flour in a small bowl; stir until smooth. Stir flour mixture into chicken mixture in skillet. Continue simmering, uncovered, until thickened, about 5 minutes. Season to taste with salt and black pepper. Top with reserved bacon. Serve immediately with hot cooked noodles.
