Ingredients
- 1 cup flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tb cocoa
- 1/2 cup soft, unsalted butter
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 cup mashed banana (about 2 bananas)
- 1/2 cup (6 oz) semisweet chocolate chips, mini preferred
- 1/2 cup sour cream

Step 1
Preheat oven to 350°. Lightly grease two mini loaf pans or mini muffin pan.
Beat butter and sugar until light and creamy. Beat in the egg, then stir in the vanilla, banana and sour cream. Gently mix in the dry ingredients and chocolate chips until well incorporated. Pour the batter into the pan(s) and bake for 45-60 minutes. (Shorter time when using mini loaves - I did 20-25 minutes for the mini muffins).
Remove bread from oven and cool for 10 minutes. Turn out onto a rack and cool completely.
