Preparation
Step 1
1Combine 1/2 cup flour with 1 teaspoon salt and 1/4 tsp. pepper in a shallow bowl. Whisk the eggs and 2 tbsp. cream in a medium bowl. Coat the steaks with the flour mixture. Dip in the egg mixture and coat again with the flour mixture.
.2Heat the oil in a 12-inch skillet over medium heat. Cook the steaks until golden brown and to desired doneness, 3–5 minutes on each side. Transfer the steaks to a serving platter. Keep warm.
.3Add the onion to the skillet and cook, stirring frequently, until softened, about 5 minutes. Move the onion to one side of the skillet.
.4Stir the remaining flour into the oil in the skillet until smooth, scraping the bottom of the skillet to loosen any browned bits. Add the broth, remaining cream, the Worcestershire sauce and remaining salt and pepper. Mix into the onion and cook, stirring frequently, until thickened, 2–3 minutes. Serve the gravy over the steaks.
