Ingredients
- 2 cups chopped chicken
- 1 can evaporated milk
- 1 can condensed cheddar cheese soup
- 1/2 cup salsa
- 1/4 t pepper
- 1 bag Southwest blend frozen vegetables, thawed
- 1 1/2 cups uncooked instant white rice
- 1/2 cup shredded cheddar cheese

Preparation
Step 1
Combine evaporated milk and soup in baking dish with wire whisk until smooth. Add salsa and pepper; mix well. Add vegetables, chicken and rice. Cover with foil. Bake at 350 for 35 minutes. Sprinkle with cheese and continue baking, uncovered, for 15 minutes.
