Basic Pizza Sauce

Ingredients
- 2 tablespoons olive oil
- 1 cup finely chopped yellow onions
- 2 cloves of garlic, finely chopped
- 2 cans (28 ounces each), drained and crushed Italian plum tomatoes
- 4 tablespoons tomato paste
- 3 tablespoons fresh lemon juice
- 1 teaspoon dried basil
- Pinch of ground allspice
- Salt and black pepper, to taste
- Pinch of hot red pepper flakes
- 2 tablespoons chopped Italian parsley

Preparation
Step 1
1. Heat oil in a medium sized saucepan. Add onion and garlic and cook over low heat to wilt the vegetables.
2. Add remaining ingredients, except the parsley. Stir well, cover and simmer over low heat for 15 minutes. Stirring once. Remove cover, add parsley and simmer an additional 15 minutes or until fairly thick, stirring occasionally. Remove from heat, cool and refrigerate.
Makes 4 cups.
Note: This sauce may be made ahead and frozen in 1 cup portions.
