Ingredients
- 2 Tbsp. olive oil
- 4 filet mignons (1 lb.), 1 inch thick
- 2 Tbsp. minced fresh garlic
- 2 Tbsp. minced shallots
- 2 Tbsp. brandy
- 1 tsp. cracked black pepper
- 2 Tbsp. A.1. Original Steak Sauce
- 1 Tbsp. unsalted butter
- 12 arugula leaves
- Side: Grilled hearts of romaine and mashed potatoes

Preparation
Step 1
HEAT oil in large saute pan on medium-high heat. Add steaks; cook 3 to 4 min. on each side or until seared on both sides.
ADD garlic, shallots, brandy and pepper; stir. Simmer 1 min. Add steak sauce and butter; stir until butter is melted. Cook until steak is cooked through (160ºF) and sauce just starts to boil.
SERVE steaks topped with the sauce. Garnish with arugula.
Substitute
Substitute 1 beef tenderloin, cut into four medallions, for the filet mignons.
