Ingredients

  • Nonstick cooking spray
  • 2 pounds whole tiny new potatoes sliced
  • 3 tablespoons margarine or butter
  • 1 large onion chopped ( 1 cup )
  • 3 cloves garlic, minced
  • 3 tablespoons all purpose flour
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 3/4 cups milk
  • 6 cups torn spinach or 4 cups brocoli rabe, cut into 1 1/2-inch pieces
  • 1 small red sweet pepper, cut into thin bite-size strips
  • 3/4 shedded whjte chedder cheese
  • 1/4 cup fine dry bread crumbs
  • 1/2 teaspoon

Preparation

Step 1

1. Coat a2-quart oval or rectangular baking dish with cooking spray; set aside, In a large saucepan, cook patatoes, covered. in a moderate amount of broiled salted water about 5 minutes or until tender. Drain and transfer to an extra-large bowl.
2. For sauce, in same saucepan melt 2 tablespoons of the margarine or butter over medium heat ; add onionand garlic and cook about 5 minutes or just until tender. Stir in flour, rosemary, parsley,salt, and pepper. Stir in milk all at once. Cook and stir over medium heat until thickened and bubbly.
3. Add spinach or broccoli rabe and sweet potatoes. Toss gently to combine. Pour sauce over potato mixture. Stir gently until coated. Spoon potato mixture into prepared baking dish ( dish will be very full) set baking dish on a baking sheet.
4. Sprinkle with cheese. Melt the remaining margarine or butter. Add bread crumbs, tossing to coat. Sprinkle over cheese. Bake in a 375 F. oven about 20 minutes or until edges are bubbly and crumbs are golden brown.
