- 1 tablespoon low-sodium soy sauce
- 2 Tbsp cornstarch
- 1 Tbsp sesame oil
- 1/2 lb lean ground pork
- 2 Tbsp canola oil
- 4 eggs, lightly beaten
- 1/2 onion, finely chopped
- 1/2 small red bell pepper, finely chopped
- 4 cups cooked rice
- 3 Tbsp oyster sauce
- 2 scallions, sliced
- 1/4 tsp salt
- 1/4 tsp black pepper

Step 1
1. In a medium bowl, combine soy sauce, cornstarch, and sesame oil. Add pork, stir, and set aside for 15 minutes.
2. Preheat a large wok. Add canola oil. Pour in eggs and scramble until cooked. Remove from wok.
3. Add onion to wok and stir-fry until fragrant. Add pork and stir-fry until cooked. Add bell pepper, rice, and oyster sauce. Stir-fry until rice is coated with sauce.
4. Add scrambled egg, scallions, salt, and pepper. Stir-fry for 2 minutes or until very hot.
