Mocha Whoopie Pies

Ingredients
- MOCHA WHOOPIE PIES:
- 3 Tablespoons instant coffee crystals
- 2 Tablespoons water
- 2 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 8 Tablespoons unsalted butter, at room temperature
- 1 cup (packed) brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup milk
- FILLING:
- 2 cups (approx.)powdered sugar
- 1 stick butter
- 2 Tablespoons instant coffee crystals

Preparation
Step 1
1. Preheat oven at 375 degrees. Mix instant coffee and water in a cup or glass.
2. In a large bowl mix flour, cocoa powder, baking soda and salt. Set aside.
3: In a different bowl mix butter and brown sugar. Add egg and vanilla. Combine.
4. Add butter mixture in the large bowl and mix well together.
5. Add coffee and milk and mix till smooth.
6. Drop about one teaspoon of batter onto a baking sheets. Bake for 10 minutes or until the cakes spring back when touched. Let them cool for about 5 minutes.
7. Mix all filling ingredients and spread filling on the cakes. Refrigerate the whoopie pies for 10 minutes before serving.
