  • 1 Ripe Mango
  • 1 lime
  • 5 rings of sliced pineapple grilled
  • 3 Tbps Rice Vinegar
  • 1/4 cup chopped red onion
  • 3 Tbps chopped fresh cilantro

Step 1

Cut the mango and grilled pineapple rings into small cubes. In a bowl mix the mango, pineapple and red onion. Mix well. Grate the zest off the lime and add to fruit mixture, set the lime aside. About 3 hours before serving add the vinegar, cilantro and squeeze in all the lime juice into the fruit and mix well. Cover and let it sit in the refrigerator for about 3 hours.

Serve salsa over grilled or blackened fish or grilled pork chopps. It is also good served over white rice.
