Smoky Spinach Artichoke Dip

Ingredients
- 8 ounces frozen chopped spinach, thawed, see Cook's Note*
- 1 (12-ounce bag) frozen artichoke hearts, thawed
- 1/2 cup plus 2 tablespoons freshly grated Parmesan
- 1/2 cup grated smoked gouda
- 1/2 cup shredded mozzarella
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon whole coriander seeds
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 4 ounces cream cheese
- Tortilla chips, for serving

Step 1
Preheat the oven to 350 degrees F.
Place the spinach in a strainer and squeeze out as much liquid as possible; set aside.
Chop the artichokes into bite-size chunks.
In a large bowl, add the spinach, artichokes, 1/2 cup Parmesan, gouda, mozzarella, garlic, red pepper flakes, coriander seeds, mayonnaise, sour cream and cream cheese and mix until combined. Pour into a baking dish, top with the remaining 2 tablespoons Parmesan and bake until the edges are bubbly and light golden brown, about 25 minutes.
Allow the dip to cool slightly before serving with tortilla chips.
*Cook's Note: A quick way to thaw out spinach: microwave for 3 minutes, covered.

We brought this dip to an outdoor BBQ and it was a huge hit! The smokiness of the cheese and the kick of the peppers and garlic made it super delicious. We served it with french bread croutons (baguette sliced thin, brushed with olive oil, add fresh ground salt/pepper, bake at 400 for 8 min and it was to die for! Several people asked for the recipe and we will definately make this again.
This was very good. Everyone loved it Saturday night and then again for the Superbowl, even people who are not fond of smoky things. I used fresh spinach that I "zapped" 1 min in the microwave and extra garlic.
Brilliant! The best I ever had! I have passed the recipe to every person who eat it at our house - they just couldn't stop eating it!
This is an amazing dip! I made this as an appetizer for a Chrismas part, and it was a hit! I would suggest using scoop or blue corn chips to serve with the yummy dip!
Very yummy. My husband also loved this dip. Next time I will add a bit more mozzarella cheese and garlic (personal preference - love garlic.
This was SO easy to make and yummy! I had extra the next day, but it was to thick after sitting in a crock pot the day before. So I added a little cream and it fixed it right up. My friends who ate it loved it the first day, and the next!
I'd prefer it if there was a bit more sauce/liquid, so I'd add more sour cream/mayo next time, as it's a bit dry. This recipe makes a huge amount - for 6-8 people. I couldn't taste the coriander so I'd add more of that next time too.
Very yummy!! Went quick at family gathering. Red pepper flakes really made it, so don't skip. I loved the smokey taste of the gouda cheese!
I made this for a blessingway I went to (a type of baby shower for a mom's second or later babies.) It's good, but I felt like it had too much cream cheese. I'd either omit that next time, or cut it at least in 1/2. I didn't personally love the coriander or the spice, but my hubby loved the leftovers! I'd recommend this recipe.
Very tasty. I made a batch last night and it was quickly eaten. I had no mozzarella, so I used Fontina. I also used ground coriander instead of the seeds (equal amount. We loved the flavors and texture. Thanks!
This recipe is delicious! It's so easy to put together and I did use fat free cream cheese and light mayo and it was so, so good! It was a huge hit with our friends. I repeatedly heard "this is really the best artichoke dip I've ever had".
This is an awesome recipe. I had to use canned artichokes and monterey jack cheese instead of the gouda but it was very good. We loved it!
Soooooo yummy. Had to make it right after I saw the show. Very tasty and easy to make. Even forgot to add the garlic, and it was still delish. Served it with Stacy's Pita Chips. This is definitely a keeper and will being making it again and again.
It turned out great! Good for sports tailgating.
