Ingredients

  • Dough
  • 3 C Flour
  • 1 T Sugar
  • 1 pkg Yeast
  • 1/4 tsp Salt
  • 3 sticks unsalted Butter chilled
  • 1 C Sour Cream chilled
  • 1/4 C Orange Juice chilled
  • 3 T ice Water
  • 1 large Egg Yolk
  • Filling
  • 1/2 C Sugar
  • 1 T Orange Zest
  • 2 tsp Cinnamon
  • 1 tsp Vanilla

Preparation

Step 1

For the Dough: Combine flour, sugar, yeast & salt in a large zip-loc bag. Cut butter into 1/4" slices. Add to flour mixture and shake to coat. Press air out of bag and reseal. Roll over bag several times with a rolling pin, shaking bag after each roll until butter is pressed into large flakes. Transfer mixture to large bowl and stir in Sour Cream, Orange Juice, Water & Egg. Combine well.

Turn dough onto floured surface and knead briefly to form smooth, cohesive ball. Roll dough into 20"x12" rectangle. Starting at short end of rectangle, roll dough into tight cylinder. Flatten cylinder gently and freeze 15 min.

For Filling: Mix sugars, orange zest, vanilla & cinnamon. Remove dough from freezer. Roll into 12"x20" rectangle. Sprinkle filling evenly over dough. Line muffin tin with aluminum cups and spray with oil. Starting at long end roll dough into tight cylinder. Cut into quarters then cut each quarter into thirds. Transfer to prepared muffin tin. Cover loosely and refrigerate for at least 4 hours or up to 24.

Adjust oven rack to middle position and heat to 200 degrees. When oven reaches 200 degrees turn off. Remove buns from refrigerator and place in oven until doubled in size, 20-30 min. Heat oven to 425 degrees. Bake until buns begin to rise, about 5 minutes then reduce temperature to 325. Banke until golden brown, 40-50 minutes.
