  • 1/2 1/2

Step 1

1. Preheat the oven to 350 degrees. Line a mini cupcake pan with liners. This recipe will make 24 mini cupcakes.

2. My first step would be to juice the Key Limes, if you are using fresh ones. I read online that you can use a garlic press and it worked really well. Your hands might get a little tired, but it will be worth it. Plus, the garlic press also gets the seeds out! Next, in a medium bowl, whisk together flour, baking powder, and salt. In another medium bowl, or your kitchen-aid bowl, mix butter and sugar on medium until combined (about 1 minute). Add the egg and mix until combined. On low, add half the flour mixture, then add the Key Lime juice, and then the rest of the flour mixture. Scrape down the bowl and mix for a few more seconds. Spoon the batter into the mini baking cups and bake for 13-15 minutes, or until a toothpick will come out of them cleanly.
3. While they are baking or cooling, it’s time to make the frosting! In a small bowl, or your freshly washed kitchen-aid bowl, beat butter until fluffy. Then slowly add confectioners’ sugar followed by vanilla and Key Lime juice. I added food coloring to mine to give it a nice Key Lime flair, but you can leave it alone if you want. I saw the lateset Food Network Magazine while I was checking out at the grocery store and on the cover it mentioned a guide to making colored frosting using only food coloring and I quickly flipped to the page where it showed every gorgeous frosting color you could ever want. I think I might buy the issue just for that page. But to get this great Key Lime green, just add 2 drops of Green food coloring and 5 drops of Yellow.
