Ingredients

  • 3 cups ellbow macaroni
  • 1 pound hot or sweet sausage
  • 1 large bell pepper
  • 2 cups milk
  • 2 cups shredded sharp chedder cheese
  • 1/4 grated Parmesan cheese
  • 1 1/4 teaspoon tabasco sauce
  • 1 teaspoon salt
  • 1 large onion
  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter or margarine

Step 1

Cook elbow macaroni according to package directions. Drain and rinse with cold water; drain again
Meanwhile, in a 12-inch skillet over medium-high heat, cook sauages, turning frequentley, until well-browned on all sides and cooked through, about 15 minutes. Remove sauages to cutting broad.
Add green pepper and onion to drippings remaning in skillet. Cook over medium heat until tender, about 8 minutes, remove to large bowl.
When sausages are cool enough to handle, cut in 1/2-inche slices; remove to bowl with vegetables.
Preheat oven to 375 F. Melt butter in a 2-quart saucepan over medium heat. Stir in flour; cook 1 minute. Gradually whisk in milk. Bring to a boil, stirring frequently. Remove from heat. Add remaining ingredients and stir constantly until cheese melts.
Combine cheeder cheese sauce, macaroni and sausage mixture. Spoon into greased 12x8-inch baking dish. Bake 20 to 25 minutes or until mixture is hot and bubbly. Serve.
