Tallan's Dark Pumpernickel

I am experimenting with making a medium-size loaf of dark Pumpernickel in my Bread Machine.

Ingredients
- 1 1/4 cups water
- 2 1/2 Tablespoons Vegetable Oil
- 1/4 cup molasses
- 2 Tablespoons unsweetened cocoa
- 1 1/2 Tablespoons brown sugar
- 1 1/2 teaspoons instant coffee granules
- 1 teaspoon salt
- 1 cup rye flour
- 1 cup whole wheat flour
- 2 cups bread flour
- 2 teaspoons yeast

I made it on the DOUGH cycle and shaped them into two loaves like you get at Outback. Smells wonderful!

It was great! Not as sweet as Outbacks, but that's okay because my DH is a diabetic. I did make the honey butter to go with it. made two long loafs but could have easily made four little loaves and next time I will freeze two, refrigerate one and bake the other so we can have fresh bread every night.

Okay, I retried this recipe. I increased molasses to 1/2 cup, decreased the rye flour to 1/4 cup, and increased the whole wheat by a 1/2 cup.
