Ingredients

  • Summer Salsa:
  • 1/4 cup olive oil, divided
  • 4 medium zucchini, diced
  • 4 Italian plum tomatoes, chopped
  • 1/4 cup fresh lemon juice
  • 1/2 tsp. dried tarragon
  • 2 tsp. fresh oregano
  • 1 tsp. salt
  • 1/2 tsp. frshly ground pepper
  • dash hot red pepper sauce
  • Chicken:
  • 8 boneless, skinless chicken breast halves (about 2 lbs.)
  • salt and feshly ground pepper

Preparation

Step 1

In large skillet, heat 2 tbsp. of the olive oil over medium heat. Add zucchini and cook until just tender, about 2 min. Stir in tomatoes and cook 3 min. In small bowl, combine remaining 2 tbsp. olive oil, lemon juice, tarragon, oregano, garlic, salt, pepper and red hot pepper sauce. Add to zucchini mixture and stir until well blended. Remove from heat.

Preheat grill to medium. Rub chicken breasts with salt and pepper to taste. Grill about 5 minutes per side. Transfer to platter and serve with summer salsa.
