- 8 red potatoes, roughly the same size
- 1/2 cup olive oil
- kosher salt
- fresh ground pepper
- herbs - maybe rosemary, parsley

Preparation
Step 1
Boil or microwave potatoes (for 10 minutes on High) until tender. Place potatoes, well spaced, on a rimmed baking sheet and drizzle (thinly) with oil. The amount listed is a total guesstimate, use what you feel comfortable with.
With either a potato masher or bottom of glass or cup, push down on the potato to flatten. The skin should break and spread, if it doesn't help it out. If using the potato masher, mash once, then turn 90 degrees. Move the potatoes around in the oil to make sure they are coated on the bottom.
Drizzle a bit more oil on top.
Dust with salt and pepper to taste, along with another herb either fresh or dried (rosemary, parsley, garlic powder).
Bake at 450 degrees for 20-25 minutes until they are browned and crispy. These are fantastic hot or cold.
