  • 2 2 2 cups dark brown sugar, packed
  • 4 4 4 eggs
  • 2 2 2 cups flour
  • 2 2 2 teaspoons baking soda
  • 2 2 2 teaspoons cinnamon
  • 3/4 3/4 3/4 teaspoon salt
  • 1-1/2 1-1/2 1-1/2 cups vegetable oil
  • 2 2 2 cups coarsely grated carrots
  • 1 1 1 cup coarsely chopped walnuts
  • Cream Cheese Frosting

Preparation

Step 1

Heat oven to 350 degrees. grease and flour two 9 inch round layer pans. In large mixer bowl, beat brown sugar and eggs.
Combine flour, soda, cinnamon and salt; add to egg mixture alternately with oil, beginning and ending with flour. Fold in carrots and walnuts. Pour batter into pans, dividing evenly. Bake at 350 degrees, 35 to 40 minutes. Cool 10 minutes in pans, then turn out onto rack to finish cooling.
Frost with a can of cream cheese frosting. Garnish with walnuts.
