Mix 1 small chopped tomato, 1 seeded and chopped serrano chili and 2 tbsp chopped fresh oregano, season with salt and set aside. Toss 8 oz grated mild yellow cheddar with 8 oz grated Monterey Jack with 1 tbsp flour and set aside. Cook 4 oz chorizo or hot Italian sausage and add 1/2 c minced onion. Transfer chorizo and then add 1/2 c beer and cook down scraping up browned bits. Add cheese mixture 1/4 c at a time until blended and smooth. Then when done stir in chorizo mixture. Add salsa. WE TRIED THIS 12/12 AND IT WAS GOOD, A LITTLE GOEY BUT ALL THE KIDS LIKED IT.
