TOSCANA SOUP 1 Picture

Ingredients

  • 3 ounces of Spicy Italian Sausage, raw (the spicier the better)
  • 1 medium onion finely diced
  • 6 cups chicken stock (low sodium F/F)
  • 4 peeled potatoes (table size) (more if you desire)
  • 1 bunch of washed spinach cut finely
  • 1/4 c “evaporated” milk

Preparation

Step 1

Take the wrapping from the sausage and break it up to desired size. Fry meat with onion until no longer pink.

Cut POTATOS to desired size
Pepper to taste, do not use any salt

Bring stock to a boil, add the potatoes & meat mixture, boil till potatoes are done

Add spinach to broth, potatoes & meat, boil till spinach is done (5 minutes)

NOTE: Thicken soup a bit if that’s what you like, but remember you are going to
Add milk next.

¼ c “evaporated” milk

Add to soup, do not boil as the milk will curdle.
