Easy Pumpkin Cake

Ingredients
- 2 16-oz. packages pound cake mix
- 4 teaspoons pumpkin pie spice
- 2 teaspoons baking soda
- 2/3 cup water
- 1 3/4 cups canned pumpkin
- 4 eggs

Preparation
Step 1
Preheat oven to 325° F. Combine cake mixes, spice and baking soda in a large bowl. Add water, pumpkin and eggs; beat well. Spread half of batter in a greased 13" x 9" pan; sprinkle with half of streusel topping (recipe follows). Carefully spread remaining batter over streusel layer; sprinkle remaining streusel topping over batter. Bake 50 minutes until done.

STREUSEL TOPPING:
1/4 cup brown sugar, packed
3/4 cup nuts, chopped
1/2 cup flour
1/3 cup butter, softened
Combine brown sugar, nuts and flour. Cut in butter until crumbly.

REVIEWS:
This was a hit with my family and friends. I made it last year for Thanksgiving and they liked it so much they asked for it at Christmas! Needless to say, I will be making it again this Thanksgiving. The only thing I altered was I made extra streusel, as it didn't seem to be enough for me. I doubled the recipe and it was perfect.
Recipe definitely a Keeper
Usually I bake something chocolate, but wanted to try something new. Saw this and decided to give it a try ... very easy to make with excellent results!!! Very, very good, indeed.

I tried this cake recipe over the holidays. I have never been of big fan of anything made with pumpkin but this was really good! I had a little trouble with the streusel (a bit thick and not very crumbly) but it still turned out quite well.
