Ingredients

  • ● 8 oz. spaghetti
  • ● 1/2 tsp salt, plus a little more for water
  • ● 2 tbsp olive oil
  • ● 4 oz. turkey bacon
  • ● 6 large eggs
  • ● 1/2 cup grated Parmesan cheese
  • ● 2 garlic cloves, finely chopped
  • ● 1/4 tsp pepper
  • ● 1/2 tsp salt

Step 1

1. Bring large pot of salted water to boil and cook spaghetti til tender, about 8 minutes, or per package directions.

2. Drain, transfer to a large bowl and toss with olive oil to coat. Let cool to room temperature.

3. Cook turkey bacon in a large skillet over med-high heat til crisp, 5-8 minutes. Remove bacon to paper towels to drain. Discard all but 1 tbsp. of fat in skillet

4. Preheat broiler to high.

5. Whisk together eggs, Parmesan, garlic, 1/2 tsp salt and 1/4 tsp pepper in a bowl.

6. Pour over spaghetti and toss to coat.

7. Crumble bacon into bowl and mix well.
Place skillet on stove over med-low heat and add egg and spaghetti mixture, spreading into an even layer with spatula. Cook till bottom is well-browned, about 8 minutes, sliding a spatula underneath fritatta occasionally to loosen.

8. Place pan under broiler and cook until top is golden and set, about 3 minutes. Cut fritatta into wedges and serve.

May substitute sausage or pepperoni for bacon, or add sun-dried tomatoes, blanched and chopped broccoli, or chopped fresh or dried herbs.
