Golden Glow Salad - Dessert

Ingredients

• 1 pkg lemon or lime jello
• 1 c boiling water
• 1 c pineapple juice
• 1 T vinegar
• 1 c diced pineapple (drained)
• 1 c shredded raw carrots
• 1/2 t salt
• 8 oz. cream cheese
• 2 T salad dressing
• 1 T confectioners sugar
• cherry juice
• pineapple juice

Preparation

Step 1

Dissolve jello in boiling water; add pineapple juice. Let thicken slightly. Mix vinegar, pineapple, carrots and salt and add to jello. Chill in mold until firm. Dressing: Cream 8 oz. cream cheese. Add a few T salad dressing, some pineapple juice, about 1 T conf. sugar and cherry juice.
