Ingredients

  • 8 oz linguine
  • 1 tsp salt, divided
  • 1/4 tsp pepper
  • 1/4 tsp dried italian seasoning
  • 1 lb large shrimp, peeled and deveined
  • 1/2 lb sea scallops
  • 2 Tbs oil, preferably olive, divided
  • 1 small onion, chopped, 1/2 cup
  • 1 clove garlic, minced
  • 1/4 cup white wine or chicken broth
  • 1 can (14 1/2 oz) diced tomatoes
  • 1/2 tsp sugar
  • 1/4 cup fresh basil, cut into thin strips

Step 1

Cook pasta according to package directions, drain. In bowl combine 1/2 tsp salt, pepper and italian seasoning. Add shrimp and scallops; toss to coat. In large non-stick skillet heat one Tbs oil over medium-high heat. Add and cook shrimp and scallops, in batches if necessary, turning once, until opaque and lightly browned around edges, 2-3 minutes per side. Remove from skillet, reserve. To same skillet add remaining oil. Add onion, garlic and remaining salt, cook, stirring until onion is tender, 2 minutes. Add wine, cook, stirring, 1 minute. Stir in tomatoes and sugar, bring to a boil. reduce heat to medium-low; simmer 10minutes. Stir in shrimp and scallops.], cook, stirring, until heated through, 1-2 minutes. Remove from heat; stir in basil. Transfer pasta to serving bowl, top with seafood mixture.
