Ingredients

  • 3 Tbs Cornstarch
  • 2 Tbs Flour
  • 1/4 tsp Salt
  • 1 C Sugar, Divided
  • 3 C Half-N-Half
  • 6 Egg Yolks
  • 2 tsp Vanilla
  • 9 oz of Chocolate Wafer Cookies
  • 4 oz Semi-Sweet Chocolate
  • 1/2 C Butter, Melted
  • 1 Quart Strawberries
  • 1/4 C Red Currant Jelly (Opt Glaze)
  • 1 Tbs Orange Liqeur (Opt Glaze)

Preparation

Step 1

Whisk together cornstarch, flour, salt, 2/3 C sugar in a saucepan. In a separate bowl, whisk together Half-N-Half , egg yolks, and vanilla. Add to dry mixture gradually, whisking constantly. Bring to a boil over medium heat, whisking constantly for one minute. Pour into a bowl. Cover and chill for 2 to 4 hours.

Preheat oven to 350 degrees.

Pulse cookie wafers and chocolate in food processor until smooth. Stir with melted butter and 1/3 C sugar. Firmly press into a greased pie plate. Bake at 350 for 10 minutes. Cool completely on a wire rack (about 30 minutes).

Pour chilled filling into cooled pie plate. Top with halved and hulled Strawberries. Cook jelly over medium heat until melted. Remove from heat and stir in and orange liqeur (or juice). Brush jelly mixture over strawberries and chill uncovered for 30 minutes.
