  • 4 c Brussels sprouts, trimmed
  • 3 T EVOO
  • coarse sea salt
  • 1/2 lemon
  • 1-2 t sriracha or your favorite hot sauce
  • 1/2 t fish sauce

Step 1

Steam sprouts until just tender, 7 mins. Once they're cool enough to handle, slice them about 1/8 in thick (little thicker than a shred; you want them to have a bit of bite and heft). Heat olive oil in a large nonstick skillet over high heat. Add sliced sprouts and season with big pinch of salt. Cook, stirring now and then, until edges are very nicely browned, nearly charred, 5-6 mins. Remove sprouts to a large bowl, squeeze lemon juice over them, add a nice pinch of salt and drizzle with sriracha and fish sauce. Toss to combine and serve immediately.
