Ingredients

  • 1 1/2 Cups Almond flour
  • 1/4 Cup Coconut flour
  • 1 tsp Ground Cinnamon
  • Pinch Salt
  • 1 tsp Baking Powder
  • 2 Chai tea bags, opened
  • 2 oz coconut oil
  • 3 lightly beaten eggs
  • 1/4 cup raw Honey
  • 5 oz Greek yogurt or Coconut Milk
  • 1 cup fresh Blueberries
  • Zest & Juice of 1 lemon

Preparation

Step 1

Preheat your oven to 350 degrees fahrenheit and line 12 muffin cases. Mix all the dry ingredients together plus the lemon zest.

Rinse the blueberries and when drained, add 2 Tablespoons of the dry mix to the blueberries to stop them sinking to the bottom of the mix, plus the juice of the lemon and mix well and set aside.

Add the blueberry mix to the dry mix and combine well. Add the eggs, yogurt or coconut milk, coconut oil and honey to this, and mix well. Divide the mix into the muffin cases evenly and bake between 15 – 20 minutes or until the top of the muffins are brown.
