Ingredients

  • 4 c fruit (peeled and sliced stone fruit, berries, whatever)
  • 4 T good quality maple syrup, divided
  • 1 T freshly squeezed lemon juice
  • 1/2 c almond meal (or grind 1/2 c of blanched almonds in a powerful blender until they're powdery)
  • 1/2 c quinoa flakes
  • pinch of fine sea salt
  • 1/2 t ground cinnamon (or any dessert spice, try cardamom and clove with chopped pears, for example)
  • 2 T EVOO

Preparation

Step 1

Preheat oven to 400.

Toss fruit in a shallow baking dish with 2 T maple syrup and lemon juice. Mix the almond meal, quinoa flakes, salt and cinnamon in a large bowl. Add 2 remaining T of maple syrup and olive oil and mix until just combined. Crumble the mixture over the fruit and bake until topping is browned and fruit is bubbling, 20-25 mins.
