Gnocchi with Tomato Sauce

Ingredients
- Gnocchi
- 2 1/2 cups boiled potatoes, mashed
- 2 eggs, lightly beaten
- 1/2 tsp salt
- 2 1/4 cups flour
- 1 cup grated parmesan cheese
- Italian Sauce
- 1/3 cup olive oil
- 2 small cloves garlic
- 1/4 lb chopped pork
- 2 (6 oz) cans tomato paste, diluted in 2 1/2 cups warm water
- 1/2 Tbs parley, minced
- 2 leaves fresh basil or 1/2 tsp dried basil
- salt and pepper to taste

Gnocchi
Place mashed potatoes, eggs and salt in mixing bowl and mix throughly. Add 1 1/2 cups of flour, mix well. Place dough on floured board and add rest of flour. Knead dough for 3 to 4 minutes. If sough becomes too sticky, sprinkle board with more flour.
Cut dough into six pieces. Roll dough into long sausage-like strips and cut into pieces 2/3 inch long. Sprinkle pieces with flour. Have ready a large pot with 8 quarts of boiling water in which 2 Tbs of salt have been added. Place one third of the little dumplings in the boiling water and remove with strainer when they die to the top. Place in hot serving dish and repeat operation until all dumplings are cooked.
Add sauce to dumplings and two-thirds if the cheese, mixing well. Sprinkle rest of cheese on top.
Italian Sauce
Saute garlic in oil. Discard garlic when golden, then add pork and brown. Add rest of ingredients and simmer, uncovered for one hour. Add a little water if sauce becomes to thick. Enough for 1 1/2 lbs of gnocchi, or for that matter 1 1/2 lbs spaghetti.
