Smothered Cabbage

"This is a great twist on traditional fried or smothered cabbage - taken from the Tony's Seafood of Louisiana website (who are quoting a Mulate's recipe). How can we go wrong? YUMMO!! My DH brought me a tee back from Mulate's when he was down helping recovery efforts after Hurricane Katrina - needless to say we love the region and the food - and now I can say I "perk" up a bit when I see Mulate's anywhere. I can't wait to get down there myself just to sample my way around the region! How DO I get one of those traveling shows myself?

Ingredients
- 1 lb smoked sausage, cut into small pieces
- 1 onions, large ( diced)
- 1 head cabbage, medium size, chopped
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon black pepper

Preparation
Step 1
In a large saucepan, brown sausage over medium heat. Add onion and saute for 3 minutes. Add cabbage and cover. Cook about 50 minutes, stirring occasionally.
Uncover and add seasonings, cook 5 minutes more. Serve as a main dish over rice or as a side with some cornbread, of course. ;).

Excellent cabbage and kielbasa recipe, full of home town flavor. Made as written with a couple of changes, I omitted the cayenne pepper, used a red onion and added sliced Baby Bella mushrooms, once everything was sauteed I poured in a bottle of Guinness Extra Stout and let simmer for 40 minutes covered and the final 10 minutes uncovered, which produced a nice sauce and a great meal. Thanks.
Wimps, beware; but chiliheads, rejoice! :) I'd never made this with andouille before. Turning it into 'Cajun Cabbage' really did it for me. Was it ever spicy -- and delicious! The stores here all carry it in 12-oz. pkg. instead of 16-oz., so I was a little short on the sausage but otherwise followed the recipe exactly. However, the amount of meat didn't seem skimpy at all. In fact, if using a whole pound, I'd increase the cabbage. Thanks for sharing, and you keep fightin, girl!!
Really delicious cabbage dish. Easy to make and uses ingredients I usually have on hand. I'm not a spicy food person but the amount of heat from the cayenne was "just right" for me. M

This is so incredibly yummy!! My Mom used to make this when I was little and I always loved it but couldn't remember how to make it. This was exactly the same, I'm so glad I made it! I used a Kielbasa because I know that's what my Mom used to use and I didn't add the cayenne pepper because I have small children who don't like spicy foods. It was wonderful! I made it with a homemade sweet cornbread and it was a perfect compliment to it. Thank you!!
I love how simple the ingredients for this recipe are. I recently made this a few months ago when looking for something new to try. My boyfriend isn't a fan of cabbage, but he LOVED this dish. I'm actually making this for the second time - for dinner tonight.

My DH said make this again. He doesn't say that much. I made it as written and loved the spice in it. I had to use turkey sausage because that is what was here. But it was still wonderful.

I make this same thing, except I use low fat turkey sausage and do not quite cook it as long so that my cabbage is a little more "crunchy." You can add your favorite seasoning during the browning of the sausage to give it a little zing (I like cajun seasoning, I don't use the cayenne). It's good with white beans and cornbread!
Very Good. We enjoyed this for lunch just by itself and ate the whole batch! I made as directed except that I cut the cooking time with lid to around 25 minutes due to time commitments. I think the 25 minutes was perfect.
This is sooooo good. I served this tonight for supper on top of mashed potatoes. I did add some margarine while it was cooking but otherwise followed recipe. We loved this and its very economical too. thank you for sharing your recipe with us, we will make it often.
I made this yummy dish last night and enjoyed some for my take-to-work lunch today (so easy to re-heat in the microwave) and again tonight for dinner with Roasted Dijon Potatoes and Asparagus Omelette Wraps. I omitted the cayenne pepper (personal taste preference), added some minced garlic to the onion and added some sweet paprika. I used a Savoy cabbage. A fabulous recipe that I'll certainly be making again. Thanks for sharing it!

Deeeelicious!! I used 2lbs kielbasa & 1 small head of cabbage. Wellllll....the fam said I need to up it to 3lbs kielbasa & a bigger head of cabbage. :o There were NO leftovers. Served over plenty of rice, too. I only added about 1/2tsp salt because of the salty sausage & only cooked it 20 minutes which was perfect. LOVE how the pan deglazes while cooking covered.....yummmm. THANK YOU for a scrumptious dinner!

nicely. I cut the recipe in half since it's just the 2 of us and I didn't want alot of leftovers. I followed Papa D's review and added a bottle of Guinness since I needed to use it up.

One word - delicious! I made as directed and served it tossed with fresh hot noodles. The whole family loved it. Next time I'll add just a little more cayenne to spice up all the noodles too!
Fantastic!! I used my favorite brand of Polish kielbasa and this was just super easy to put together. Perfect for a no fuss weeknight dinner. The cabbage cooked up tender, but not overdone and the flavor was great! Perfect with a nice ale (I drank Gritty McDuff's Halloween Ale).
This was great. I will use less cayenne as we have 3 young ones and it was too hot for them. I used red cabbage because it is what I had. I am looking forward to making this again. I didn't realize that I hadn't reviewed it until I couldn't find it in my reviews. I HAD to go looking for it.
I served this as the main course in our Southern New Years dinner. It was fantastic. I loved the cayenne pepper. DH didn't like it so much and said it was too hot, but he's picky so his opinion doesn't count this time :)

Wonderful dish! I loved the subtle heat from the cayenne. I served this as a side dish, but it would make a great weeknight meal with just some cornbread.
Great Sunday night dinner! Andouille sausage is not available in this part of the country so I used smoked sausage. For whatever reason it took over an hour to cook (probably our altitude) and was getting a little dry so I periodically added a little beer to make steam. Served over mashed potatoes with Coleman's mustard! DH was one happy camper!
A wonderful cabbage dish! I did substitute Johnsonville Smoked Turkey Sausage, but otherwise followed the recipe. The cayenne definitely adds a kick. This is now on our list of favorites.

Yep, this is the real deal! I usually use bacon in my cabbage but think this is much tastier and with the sausage, you can eat it as your main dish with cornbread! If you ever get to Mulates, try the stuffed crabs!!! I'd be happy to show you around these parts!!! Thanks for the great recipe!!!
Love it! Tasty with a little bite to it. I used reduced fat smoked sausage, but no other changes were made. Thanx for a great new way to do cabbage! This is a winner!
EXCELLENT!! I feel a wee bit guilty about tagging this to rate, because being a Cajun, this is EXACTLY how I make smothered cabbage! I used Andouille sausage sliced into thin strips.We love cabbage this way. When we first married, and I was making this, my DH informed me that he did not eat cabbage, well needless to say, all it took was one bite of this, and that changed.Now he loves it when I cook it this way.Thanks for sharing this one with everyone Mommy Diva! I think everyone who knows a cabbage hater, should try this way on them!
