Tortilla Soup

Ingredients
- 1 Tbs Olive Oil
- 3 C Mild or Medium Salsa
- 4 C Chicken Broth
- Vegetable Oil
- 6-8 Corn Tortillas cut into 1 inch strips
- Salt, to taste
- 1 C Mexican Style Cheese
- 1 Large Diced Avocado
- 1-2 Limes, Quartered

Preparation
Step 1
In a large saucepan, heat olive oil over medium high heat until very hot. Add the salsa and stir constantly until it is reduced to a thick paste. This will take about 10 minutes. Add the chicken broth and partially cover similar over medium-low for about 45 minutes.
While soup is simmering, heat enough oil to fry the tortilla strips. Fry 1/3 of them until crispy. They fry quickly! Drain on a paper towel.
