Ingredients

  • 1 Tbs Olive Oil
  • 3 C Mild or Medium Salsa
  • 4 C Chicken Broth
  • Vegetable Oil
  • 6-8 Corn Tortillas cut into 1 inch strips
  • Salt, to taste
  • 1 C Mexican Style Cheese
  • 1 Large Diced Avocado
  • 1-2 Limes, Quartered

Preparation

Step 1

In a large saucepan, heat olive oil over medium high heat until very hot. Add the salsa and stir constantly until it is reduced to a thick paste. This will take about 10 minutes. Add the chicken broth and partially cover similar over medium-low for about 45 minutes.

While soup is simmering, heat enough oil to fry the tortilla strips. Fry 1/3 of them until crispy. They fry quickly! Drain on a paper towel.
