Ingredients

  • 12 oz Chicken Breast (12 points)
  • 6 C Fat Free Chicken Broth
  • 2 C Sliced Mushrooms
  • 2 C Onions
  • 2 C Tomatoes
  • 2 C Carrots
  • 1 C Chopped Celery
  • 1 C Rotel
  • 2 tsp Cumin
  • 2 tsp Minced Garlic
  • 1 tsp Salt
  • 1 tsp Pepper
  • Juice from one Lime
  • 1/2 C Cilantro
  • 6.75 oz can of Corn (3.5 points)
  • 8 Corn Tortillas (8 points)
  • 1 15 oz can of Pinto Beans (7 points)

Preparation

Step 1

Cook and dice chicken.
Crisp tortillas in oven and break up.
Combine broth, seasonings, vegetables and lime juice. Boil and summer for 20-30 minutes. Add chicken and other ingredients. Simmer 10 minutes.

Serves 12 (1.5 C per serving)
