Ingredients

  • Optional Icing:
  • 1 yellow (butter) cake mix (48)
  • 4 eggs, separated (8)
  • 1 small pkg lemon Jello (8)
  • 3/4 C apricot nectar (2)
  • 3/4 C oil (36)
  • 3 Tbs lemon flavor (0)
  • 2 1/2 C Powdered Sugar
  • 1 Can Apricot Nectar, plus leftover from cake

Preparation

Step 1

Preheat oven to 350 degrees.

Mix ingredients at medium speed for 5 minutes. Beat egg whites until stiff. Fold into batter.

Bake in a bundt pan for 35-40 minutes

For a sugar icing, begin with a small amount of powdered sugar and add milk one tsp at a time until it is drizzly. You can add a bit of lemon or almond extract.

Serves 16 at 6 WW Points Each

Glaze . . . Mix sugar and nectar. Let sit in microwave for 15 minutes. Spread on cake.
