Ingredients
- 3 eggs
- 1 tablespoon lemon zest
- 1 cup oil
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 2 cups zucchini, shredded
- 1 teaspoon salt
- 1 teaspoon cinnamon
- Honey Lemon Butter, recipe follows
- 4 ounces butter, softened
- 1 tablespoon honey
- 1 tablespoon lemon zest

Preheat oven to 350 degrees F.
In large bowl beat together eggs, oil, sugar, and vanilla. Slowly add zucchini. Add lemon zest and mix thoroughly.
In a separate large bowl combine flour, baking soda, baking powder, salt, and cinnamon. Slowly add zucchini mixture until completely combined.
Divide batter into two greased loaf pans. Bake for about 1 hour and 15 minutes, until skewer comes out clean.
Lemon Honey Butter:
Combine all ingredients and mix together well. Chill and serve.
