Ingredients
- 8 oz reduced fat ricotta chees
- 1 c light mayo
- 6 oz shredded part-skim mozzarella cheese, divided
- 1/4 c grated Parmesan cheese
- 3/4 c diced, seeded plum tomatoes, divided
- 2 1/2 oz can sliced ripe olives, drained & divided
- 1/4 c sliced turkey pepperoni
- 1 t garlic powder
- 1 t Italian seasoning
- 1/8 t crested red pepper flakes
- Cooking spray
- Assorted crackers or breadsticks.

Preparation
Step 1
In sm bowl combine ricotta, mayo, 1 c mozzarella, Parmesan, 1/2 c tomatoes, 6 T olives, pepperoni, garlic powder, Italian seasoning & pepper flakes.
Spread into 9 in pie plate coated with cooking spray. Sprinkle with remaining mozzarella . Bake at 350 for 25-30 min until edges are bubbly & top is golden brown. Sprinkle with remaining tomatoes & olives. Serve with crackers.
