Chicken Breasts with Guacamole & fried Prosciutto 0 Picture

Ingredients

  • 4 ripe avocados, halved & peeled
  • 1/4 C + 2 T lemon juice
  • 1/4 C cilantro
  • 2 cloves minced garlic
  • 2 jalapenos, minced
  • 1 small red onion, finely chopped
  • Salt & pepper
  • 3 T olive oil
  • 1 T butter
  • 1/4 lb prosciutto, cut crosswise into 1/2" strips
  • 8 whole chicken breasts, pounded
  • 2 ripe med. tomatoes, chopped

Preparation

Step 1

1. In large bowl, coarsely mash avocados with fork. Add lemon juice, cilantro, garlic, jalapenos & onion & mix well. Season with salt & pepper. Press plastic wrap directly on guacamole & refrigerate.
2. In large skillet, heat 1 T olive oil with butter. Add prosciutto in single layer & cook over mod hi heat, stirring often, til lightly browned, @ 3 min. Drain on paper towels.
3. Light grill. Rub chicken breasts with olive oil & season with salt & pepper. Grill over hi heat til lightly charred and just cooked thru, @ 4 min. Serve hot topped with guacamole, prosciutto & tomatoes.
