Ingredients
- 4 ripe avocados, halved & peeled
- 1/4 C + 2 T lemon juice
- 1/4 C cilantro
- 2 cloves minced garlic
- 2 jalapenos, minced
- 1 small red onion, finely chopped
- Salt & pepper
- 3 T olive oil
- 1 T butter
- 1/4 lb prosciutto, cut crosswise into 1/2" strips
- 8 whole chicken breasts, pounded
- 2 ripe med. tomatoes, chopped

Preparation
Step 1
1. In large bowl, coarsely mash avocados with fork. Add lemon juice, cilantro, garlic, jalapenos & onion & mix well. Season with salt & pepper. Press plastic wrap directly on guacamole & refrigerate.
2. In large skillet, heat 1 T olive oil with butter. Add prosciutto in single layer & cook over mod hi heat, stirring often, til lightly browned, @ 3 min. Drain on paper towels.
3. Light grill. Rub chicken breasts with olive oil & season with salt & pepper. Grill over hi heat til lightly charred and just cooked thru, @ 4 min. Serve hot topped with guacamole, prosciutto & tomatoes.
