Ingredients

  • 2 1/2 c flour
  • 1/2 c cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 c butter
  • 2 c sugar
  • 4 eggs
  • 1 c sour cream
  • 1/2 c buttermilk
  • 1 oz each red food colouringand red wine vinegar
  • 2 tsp vanilla
  • Vanilla Cream Cheese Frosting
  • 250 g ream cheese
  • 1/4 c butter
  • 2 tsp vanilla
  • 3 1/2 c icing sugar
  • 8 oz white chocolate,melted

Preparation

Step 1

Mix flour,cocoa,baking soda and salt
Beat butter and sugar 5 min until light and fluffy
Beat in sour cream,buttermilk food colouring vinegar and vanilla
Gradual;ly beat in flou at low speed in 3-4 additions
Spoon batter into prepared muffin pans
Bake at 350 for 20-25 min
For frosting:
Beat cream cheese,butter and vanilla
Gradually beat in icing sugar until smooth
Place frosting in opastry bag without a tip
Pipe frosting on to cooled cupcakesin a curly pattern(similar to soft ice cream cone)
Refrigerate cupcakes 30 min until frosting is smooth
Gently and quickly dip cupcake tops into melted chocolate
Let cupcakes warm to room temperature for i hour before serving
