  • 2 cups flour
  • 1 cup sugar
  • 2 t. baking powder
  • 1/4 t. salt
  • 2 cups blueberries
  • 1/2 cup milk
  • 1/2 cup oil
  • 1 egg
  • 1 t. vanilla

Preparation

Step 1

Preheat oven to 375 degrees with rack in the middle. Line muffin pan with baking cups. Stir together flour, sugar, baking powder and salt. Add blueberries and stir with a wooden spoon.
Blend the milk, oil, egg and vanilla in a blender. Pour over the flour mixture and mix just until combined. Divide the dough between 10-11 baking cups.
Bake 15 min., rotate pan and bake an additional 10-15 min. more. Cool on rack.
