S'mores Cookies

A soft and chewy chocolate chip cookie with graham crackers and marshmallows bits baked in. A perfect campfire treat without the mess!

Ingredients

  • ¾

    stick unsalted butter, room temperature

  • 6

    tbsp brown sugar

  • 2

    tbsp granulated sugar

  • ½

    an egg

  • 1

    tsp vanilla extract

  • ¾

    C + 2 tbsp all-purpose flour

  • 1

    tsp cornstarch

  • ½

    tsp baking soda

  • pinch salt

  • ½

    C graham crackers (about 3 sheets), roughly chopped

  • 1

    C mini semi-sweet chocolate chips

  • C Jet-Puffed Mallow Bits

Directions

1. In a large bowl with a hand mixer or with a stand mixer, cream together butter, brown sugar, granulated sugar, 1/2 an egg, and vanilla. 2. Add in flour, cornstarch, baking soda, and salt. 3. Fold in the graham crackers, chocolate chips, and marshmallow bits. 4. Roll into balls using a cookie scoop or roughly the size of a tablespoon. Chill on a plate for at least 30 minutes. Bake at 350F for 8 minutes.
