Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 T. EVOO
  • kosher salt and fresh ground pepper
  • 3 T. butter, melted
  • 2 - 3 T. bottled hot sauce (I like Pete's)
  • 1 1/2 c. bottled ranch or blue cheese salad dressing
  • 2 (16 in.) prepared thin pizza crusts (Mama Mary's pizza crust recommended)
  • 1 8oz. pkg. shredded sharp cheddar
  • 1 8oz. pkg. shredded mozarella

Preparation

Step 1

Preheat oven to 350.
Place the chicken breasts on a sheet pan. Brush both sides with EVOO and sprinkle with salt and pepper. Roast in oven 20 - 25 minutes, or until chicken is completely cooked.
Remove chicken from oven, and raise oven temp. to 425.
Cut the cooked chicken in small cubes.

In a medium bowl, toss chicken with melted butter and hot sauce.
Spread half of the dressing over each of the pizza crusts, then top with chicken and sprinkle with a mixture of shredded cheeses.

Bake in a 425 oven until crust is golden brown and cheese is bubbly, about 5 - 7 minutes. Let sit for a few minutes before slicing.
