Ingredients
- 4 cloves garlic
- 2 (14 oz) cans vegetable broth or one box prepared broth
- 2 (14 oz) stewed tomatoes (low salt preferred)
- 1 t. dried basil or 2 t. italian seasoning
- 1 (10 oz) frozen chopped spinach, thawed and squeezed dry or fresh
- 1 1/2 C. partially cooked whole grain pasta (spiral)

Preparation
Step 1
In heavy pot over medium heat, saute garlic cloves in little broth or water. Add rest of ingd. except pasta. Bring to boil. Reduce heat and simmer for 8 to 10 mins. Add pasta and cook 5 more minutes. Serve in bowls. Garnish with shredded veggie cheese. You can't believe how easy, light and delicious this soup is until you try it.
