Granddaddy's Georgia Ice Cream

My grandfather was quite a man and he loved the South, and on several occasions, I heard him call grits ~ Georgia Ice Cream. But these are not your normal grits, these are gourmet!

Ingredients
- 3 cups cooked grits, still warm
- 2 large eggs, lightly beaten
- 1/4 cup milk
- 3/4 cup sharp cheddar cheese, grated
- 1/4 cup sweet onions, minced
- 2 tablespoons butter, melted
- 2 garlic cloves, minced
- 1 teaspoon salt, or to taste
- Fresh ground black pepper to taste

Preparation
Step 1
In a large bowl, combine the cooked grits, eggs, milk, cheese, onions, butter and garlic. Season with salt and pepper. Stir until well blended.
Prepare a 1½-quart casserole dish with butter. Pour grit mixture into casserole.
Bake at 350 degrees F for 1 hour, if it begins to brown too much on top, cover with foil.
