Ingredients

  • 4 medium Russet potatoes (about 3 pounds), scrubbed
  • 1 tablespoon olive oil
  • 1 package (1 ounce) dry Italian dressing mix

Preparation

Step 1

Lightly spray a large piece of aluminum foil with nonstick cooking spray. Preheat grill to medium-high heat. Place the prepared foil on the grill. Pierce the potatoes with a fork.


Microwave each potato until it just begins to soften, about 2 minutes. Cut each microwaved potato into 4 long wedges. Place the potatoes on the prepared foil on the grill. Grill for 3 minutes. Turn the potato wedges over. Grill until the potatoes are golden and softened and grill marks appear, about 3 minutes longer.


Meanwhile, combine the oil and dressing mix in a large bowl. Mix well. Toss the grilled potatoes in the dressing mixture. Serve immediately

Try this recipe with sweet potatoes, too. Substitute 1/2 teaspoon Cajun seasoning, or more to taste, for the Italian dressing & mix.
