Ingredients

  • 3 3/4 cups (500g) bread flour
  • 2 1/2 tsp yeast (instant or active dry)
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • 1 1/3 cups (300g) water (room temp about 72 degrees)
  • olive oil

Preparation

Step 1

Whisk together dry ingredients.

Add water and mix with dough hook (in mixer) or with wooden spoon or your hand until blended.

Lightly coat bowl and dough with olive oil.

Cover and let sit at room temperature until the dough has doubled in size (about 2 hours)

Oil two 13 x 18 inch half-sheet pans.

Cut dough into 2 - 4 pieces. Roll and stretch the dough to fill the pans as desired. The dough should be thin between 1/8 and 1/4 inches thick.

Top and bake in a very hot (450-500 degree) oven.
