Chipotle-Glazed Roast Chicken with Sweet Potatoes

My favorite part of this dish is the chipotle glaze that drips off of the roasted chicken onto the sweet potatoes. Divine! The chicken has just enough kick but isn’t too hot for the kids. Make sure you have lots of tortillas to clean your plate with. You won’t want to leave a drop behind.

Ingredients

  • 4 sweet potatoes (10 ounces each), peeled and cut into 1-inch pieces
  • 2 1/2 tablespoons olive oil
  • 4 chipotle chilies in adobo sauce, minced
  • 2 garlic cloves, minced
  • 2 tablespoons honey
  • 2 teaspoons cider vinegar
  • 1 1/4 teaspoons salt, plus additional to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 6 boneless, skinless chicken breasts (2 pounds), rinsed and patted dry
  • Chopped cilantro, for garnish (optional)

Preparation

Step 1

1. Preheat the oven to 400 degrees. In a medium bowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 minutes.

2. In a small bowl, mix together the chilies, garlic, honey, vinegar, salt, cumin, and cinnamon to make a paste. Rub the paste evenly over each breast.

3. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 to 30 minutes. Serve garnished with cilantro if desired.

NOTE:
Chipotle peppers are actually jalepeno peppers that have been dried, smoked and packed in a sauce made of vinegar, spices and tomatoes. They lend a wonderful smokey flavor to sauces and you can get them in the Mexican food section of your grocery store.

This is a great dish. I've made it twice now, once for my husband and me and once for dinner guests. It was a big hit! I used chicken thighs the first time and chicken breast tenders the next time, and both were delicious.

What a delicious recipe! I was searching for a chicken recipe. I decided to step out of my comfort zone and look at the "newest" added recipes instead of the "most popular". Wow! The sweet potatoes were pillowy soft inside and perfectly caramelized out. The chicken was tender and juicy with just enough kick. I will make this again. Thank you for a different twist to plain old boneless chicken breasts.
